Granola . . . Take 2

Back in July I wrote about my love for granola. Since that post, I’ve tried a new recipe. It is so so so good.

Maple-Nut Granola

5 C. old-fashioned rolled oats

1 C. unsweetened coconut

1/2 C. sliced almonds

1/2 C. sliced pecans

1/2 C. brown sugar

1/3 C. unsalted pumpkin seeds

1/2 C. maple syrup (Use the real stuff, not the fake pancake syrup.)

1/2 C. oil (I use olive oil.)

1/2 C. dried cranberries

1/2 C. dried raisins

Preheat oven to 275 degrees.

Mix oats, coconut, nuts, sugar, and pumpkin seeds in a large bowl. In a separate small bowl, combine maple syrup, 1/2 C. water, and oil. Pour the liquids over the oat mixture, stir to combine. Spread the mixture in a large pan.Bake 45 minutes. Remove from oven, stir, and bake 45 minutes more. Cool. Stir in 1/2 C. dried cranberries and raisins (or any dried fruit of your choice.)
