Beet Risotto with Greens, Goat Cheese & Walnuts

This was a perfect recipe for me to make several weeks ago because it used up some things we had from our CSA share–especially beets and Swiss chard. We fed some to Evelyn and she thought it was delicious. I tried to keep reminding myself that she’d eaten this whenever I’d change her diaper. I didn’t want to be too alarmed.
Parent-talk aside, this was a delightful dish. It wasn’t too hard for risotto because I didn’t stir it the entire time. And the dish has all you need for a one-dish meal. Nice.
