What is “Meatless Monday”?

Meatless Monday is a global movement to encourage healthy eating–for ourselves and our environment. Rather than a clarion call for extreme eating changes, Meatless Monday is a simple, accessible choice that most people can make without turning their lives upside down. I wouldn’t even call it a commitment–I’d call it a guide.

On Mondays I blog about ways to cook so that you, too, can have a Meatless Monday. If you’re interested in learning more about this, check out the official Meatless Monday website. You can also look at a wonderful list of blogs that feature their own Meatless Mondays.

I really like Meatless Mondays, even though my Meatless Mondays seem to wander throughout the other days of the week. I like that it is not extreme. I like that it’s a gradual introduction (or not gradual, if you select only to have one day a week be meatless), not a sudden, drastic change. I like the communality of it all. And that’s why I’ve chosen to blog about it.

Even though I’ve only recently begun blogging for Meatless Monday, there are plenty of other vegetarian options here that you may enjoy on Mondays–or any other day, for that matter. Here’s a small sampling:
