Granola…take 5

March 5, 2011

I have posted over four recipes for granola on four different posts. Here they are:

1) Recipes for flax seed granola, kitchen sink granola, and chunky granola

2) Recipe for maple nut granola

3) Granola with cashews, dried fruit and wheat germ (this makes a teeny-tiny amount)

4) Granola (this one makes a huge amount–hence my name “Giant’s Granola for a  Month”)

So, today, I will post another wonderful granola recipe I have tried and we have enjoyed. This recipe makes a medium amount and it is quite delicious.

Daily De-Lish Original Granola

1 C. whole almonds

1 C. walnut halves

3 1/2 C. old fashioned rolled oats

1/2 C. sunflower seeds

1 t. seas salt (reduce by half, if you wish)

1 t. ground cinnamon

4 T. butter

1/4 C. honey

1/4 C. brown sugar

1/4 C. vegetable oil

1 C. raisins or dried currents

Preheat oven to 300 degrees and oil or butter a rimmed cookie sheet. Place almonds and walnuts in a food processor or nut chopper and reduce to desired size. Place oats in a large mixing bowl. Add nut mixture, sunflower seeds, salt, and cinnamon. In a saucepan or the microwave, melt butter. Add honey, brown sugar, and oil. Mix wet ingredients into the dry ingredients, folding until combined. Spread evenly onto the cookie sheet and place in pre-heated oven. Bake 30 minutes, stirring occasionally. Remove from oven; add raisins or currants. Allow to cool. Store in a covered container at room temperature.

Making granola option #5 today, but with pecans instead of walnuts (hubby has a mild allergy to walnuts)… hopefully L & R can help me make it. Yum!
